Awesome Possum Stew
Awesome Possum Stew
It tastes better if you've been drinking.
Ingredients:
*two cans of tomato sauce
*three cans of cooked tomatoes
*1/2 thickly sliced worthog meat (mainly for flavor)
* a big bag of pasta noodles (any redneck kind will do)
* 1/2 possum (other 1/2 can be used for breakfast possum-omlettes)
salt and pepper
Directions:
Fry bacon in big gramma kettle, over mid. size fire, then fry possum in the grease till golden brown. Take the meat out, then add enough water to pot to fill 2/3 way and then boil noodles. Once cooked add both things of tomatoes to kettle and meat and add enough salt and pepper to old granny's taste. Cook all together for a bout 1 hour simmering over low fire to Sautee.

Took a few days, but just to let you guys in on a joke and loads of ribbing....
My wife and daughters stumbled upon a dead possum in the street that just happened to have about 5 or so baby possums needing a home.
She actually found a local lady who is dubbed..."possum lady". She rescues possums.
The wife and kids had a blast visiting the babies, watching them back to health and being let out back to the wild.
I don't eat rodents....to include squirrel, rabbits, ground hog, ect.....

There was a time in my life where I hunted and fished a bunch. Even spent loads of time with one of my buddies who had a nice beef farm.
I can do all that, and had fun at it....but in the mean time, I also can go to Kroger and get some chicken for a hell of a lot less than what it cost to raise them.
When TSHTF, I'm ready to hunt, kill, clean, cook and eat groundhog, I just gotta' figure out how to 'splain to the kids that it's really chicken.

Had Possum Chili once (Chili is a sort of Stew). It was prepared by the Tennessee contestants at the International Chili Cook-off.
Also had Havalina Chili a few times when I was at the Manned Space Center in Houston ....also had it Smoked (BBQ).

Didn't find the Possum Chili that good, but then at the time I had no idea what in the hell Possum should actually be like, taste like.
Most of my Chili is either Chili Roja (bowl of Red), Chili Verde (made with Pork & Hatch Green Chile's), or Chili Blanco (made with Chicken and Navy Beans); the latter is the only Chili I make with Beans (mostly for the Kids). Chili has no Beans, or it's called, Chili with Beans.

Chili with Bear Meat;
The Guys on the Alaska Pipeline (I did some Engineering on it) had my Chili and asked me if, on my next trip up, would I bring all the Chili Ingredients to make Chili at their Cabin, to teach them, they would provide the Meat.
I did do that on my next trip. They hauled me out to their cabin, and I laid out all the stuff. When they brought out the meat,they threw a whole side of Wild Bear on the counter ...I said what the hell am I going to do with that? The Chili was great but I was not use to the very Gamy Taste of Bear as they were. Almost all my Bowls of Red are made with Chuck, Tri-Tip or Brisket. I did once make Chili for a friend using Elk, but it was so Lean that I Coarse Ground it rather than Cube it as I usually do.
