Miracle Whip

When making macaroni or potato salad, has anybody ever used Miracle Whip instead of mayonnaise? It's just something I have been thinking of because we have a bbq coming up Thursday, or do you think this is not a good time to experiment? I am getting bored with making things the same old way.

If anybody (hey Dave, hint, hint) has a recipe they love for making macaroni or potato salad, please share it. I happened to mention to one of the ladies here that I always put tuna fish in my macaroni salad, and she said she doesn't think she would like it. What do you think? We don't have to make anything, but they always like it when we contribute.

On a family vacation many years ago, we stopped in Lancaster, PA . We chose an Amish restaurant just to see what the food was like. I didn't care for it at all. So, I will stick with mayo.

I've been making this macaroni salad since 1971 or 2 when I got the recipe from a friend. Everyone loves it!

4 cups cooked elbow macaroni
1/2 cup green onions, chopped
1/3 cup green peppers, chopped
1/2 cup shredded cheddar cheese
2 hard boiled eggs, chopped or sliced

cook macaroni, drain and rinse with cold water. Add onions, peppers, eggs and cheese.

Dressing:
2/3 cup mayonnaise (Hellman's is my favorite mayo)
2 tablespoons sugar
1 teaspoon mustard
1 tablespoon vinegar
1 teaspoon salt
dash pepper

Mix together and stir into macaroni mix.

Tastes better if it sets in the frig a few hours or overnight.

I usually double this.

Down here in the tropics, we call mayonnaise "The White Death" due to its effect at picnics. It is awful to see bodies piled around a bowl of potato salad.....

That is pretty much the way I have been making it, with a few changes. As the saying goes "If it ain't broken, don't fix it."
