My question is, has anybody ever done this before? I found this recipe, but I am wondering why the garlic has to be roasted. Any ideas about this?

It makes it soft and extra yummy.

The roasting has the effect like grilling onions, it carmelizes the cloves, and It adds a totally diferent dimension to the dish.
Even when you make garlic bread with diced garlic and butter it isn't the same, on garlic bread the garlic obviously doesn't grill as long, so therein lies the difference..... when you slow roast the garlic it is sooooo good.
If you are like me, roast an extra head of garlic to snack on, so you don't rob the recipe.
