Spicy Sausage Pasta - easy weeknight meal

Spicy Sausage Pasta

Found this on Pinterest. Looks fantastic and very easy to make. Lots of photos and tips on the website.

1 tbsp olive oil
1 lb smoked sausage
1.5 cups diced onion
2 cloves garlic, minced
2 cups low-sodium chicken broth
1 (10 oz) can Ro-Tel tomatoes and green chiles, Mild (Dave used a 14 oz. can of Contadina diced tomatoes, plus a small can of mild green chilies.)
1/2 cup heavy cream
8 oz penne pasta
1/2 teaspoon salt and pepper, each
1 cup Monterey Jack cheese, shredded
1/3 cup thinly sliced scallions

1. Add olive oil to an oven-safe skillet over medium high heat until just smoking. Add sausage and onions and cook until lightly browned, about 4 minutes. Add garlic and cook until fragrant, about 30 seconds.

2. Add broth, tomatoes, cream, pasta, salt and pepper and stir. Bring to a boil, cover skillet, and reduce heat to medium-low. Simmer until pasta is tender, about 15 minutes.

3. Remove skillet from heat and stir in 1/2 cup cheese. Top with remaining cheese and sprinkle with scallions. Broil until cheese is melted, spotty brown, and bubbly.

Wow! Just had this for dinner tonight. I'm already working out how I can double the recipe for parties. Moderately easy. I like to chop, so I didn't buy the frozen onions like she recommended.

One substitution I may try is a can of Contadina diced tomatoes. The Rotel are a little watery and not as flavorful. (IMHO)

And I may need to use a smaller, higher sided pan. I had to add more chicken stock 5 minutes from the end. I used a 12" skillet and it evaporated the liquid too fast.

Definitely a keeper!

I will take your advice on the tomatoes and just buy a can of green chilies.

I have a 3 quart saute' pan so again I will take your advice and use that instead of a skillet.

That sounds good, but the problem is my pots and pans are all stainless steel, and I don't think it would be a good idea to put them in the oven. Could I just add the cheese and scallions, and skip the last step?

Or you could just put it into a casserole dish and put that under the broiler to finish. But if your stainless pans have metal handles, you can put them under the broiler. It's only for less than 3 minutes. And then you just use one pan for the whole meal.

They do have ss handles, and what I love about these pots and pans is that the handles never get hot while in use. Of course I realize they will when put in the oven, but that's okay.
Thanks Dave, I never would have thought about this possibility.

BTW, would I find the can of Ro-tel tomatoes and green chiles in the same section of the store as the other canned tomato products, or would they be somewhere else?

The Ro-Tel tomatoes are usually with the other canned tomato products.

Well, I made this again last night. And I used a 14 oz. can of Contadina diced tomatoes, plus a small can of mild green chilies. Turned out great. I also used a smaller, 10" skillet, and that helped to prevent too much evaporation. I didn't have to add more liquid.

I found that the kind of pan you use to cook this in has a big effect on the results. I first used a 12 inch skillet, and that evaporated the chicken stock too quickly. I had to add some towards the end. If I use a 10 inch skillet, it turns out great and I don't have to add more liquid.

I found Hillshire Farms Smoked Sausage, which was perfect in this recipe. They sell it in 14 ounce packages, but that was plenty for this recipe.

The "spicy" part of this comes from the Rotel peppers and tomatoes. I don't use Rotel because it's a little watery. I like Contadina or Hunts diced tomatoes. So, you don't need spicy sausage for this.

That makes perfect sense as a larger pan provides more surface area for evaporation.

Did not have Ro-tel. Used Del Monte.

Did not have penne. Used ziti.

Did not have smoked sausage. Used Italian fennel sausage.

Did not have heavy cream. Used sour cream, after everything was cooked, stirred in with the cheese.

Did not have scallions. Used chives and parsley.

Did not use oven-proof pan, so skipped that step.

Still, it was reeeeel guuuuud! Thanks, Dave!
