Flat Iron Steak

Anyone in here ever cooked a Flat Iron Steak?

I know it's popular in other countries but is catching on here.

I know it comes from the shoulder of the steer, the whole is cut 'with the grain', and has a connective tissue running through the center. But beyond that I know little about it; how well marbled it is, it's tenderness compared to other steaks, flavor etc. Maybe someone in here has experience with it...actual use kind of stuff.

May also go by the name, Blade Steak.

Nah, that's a spatchcocked Chicken, I ve done many of those in the broiler, and on the grill.

Flat Iron Steak is a true cut of steak from the shoulder area. Called Flat Iron because it looks like an old fashion Flat Iron.

I have hauled a lot of them, never cooked one though...I have seen Mexican restaurants commonly buy them.

There’re about 15 high-end Restaurants in Las Vegas that now serve Flat Iron Steak, including Thomas Keller’s Bouchon and Wolfgang Puck’s Bar & Grill. Friend in Minneapolis told me there’s half a dozen steak houses that serve it there.
