Easy and yummy! I made this for a church potluck last weekend, and it was a big hit!
1 box graham crackers
2 boxes Instant French Vanilla pudding (make sure it's instant!)
3 cups milk
1 9oz Cool Whip
2 Tbls. corn syrup
3 Tbls. butter
1-1/2 cups powdered sugar
3 tsp. vanilla
3 Tbls. milk
2 squares unsweetened chocolate
Butter a 9" X 13" pan or casserole dish. Line bottom with a layer of whole graham crackers (halved or quartered for sides/corners). Mix pudding with milk and mix with beater on low for 1 minute. Add Cool Whip and hand whip until evenly mixed. Spread half of mixture evenly over graham crackers. Then add another layer of graham crackers on top, followed by the rest of mixture, and finally a last layer of graham crackers on top of that. Refrigerate for at least 2 hours, covered.
After mixture is chilled, stir together corn syrup, butter, powdered sugar, vanilla, 3 Tbls. of milk, and chocolate on med-low heat until well heated and mixed. Spread evenly over mixture and chill again, covered, until set.

This seems way too easy.

Question - when you add the pudding at the beginning, is that straight from the box? Or, do you make it first?

Straight from the box! Do NOT follow the package instructions! That is what the 3 cups of milk substitute for.StarryNightDave wrote:Question - when you add the pudding at the beginning, is that straight from the box? Or, do you make it first?

Re: Chocolate Eclair Cake
OK. Sounds great. I love pudding and chocolate - as in eclairs.
