Peanut Butter and Banana-ies - a brownie-like cake

Another brownie-like cake, only this time with peanut butter and banana. These worked really well. But, took me a couple of tries to perfect the recipe.

Ingredients:

1 very ripe medium-sized banana skinned
1/4 cup peanut butter - smooth
1 1/2 sticks butter
2 cups sugar
3 large eggs
1 tsp vanilla
1 tsp cinnamon
1/2 tsp nutmeg
1 tsp salt
1 generous cup of flour
1 cup chopped walnuts

Method:

In a large sauce pan on medium-low heat, mash the banana very well with a fork. Stir occasionally and let the banana mash get hot to the point where it starts to fry or sizzle a little. At that point, turn off the heat and add the butter. Stir to melt and blend off of the stove to cool down the mixture.

When melted, add the sugar and stir well to combine. After the sugar has been incorporated, the mixture should be cool enough to add the peanut butter. If the mixture is too hot, the oil will separate from the peanut butter and ruin the batter. Add the peanut butter and stir well. Then, add the eggs one at a time mixing each one well into the batter. Then add the vanilla and stir.

In another bowl, add the flour, cinnamon, nutmeg, and salt and stir gently with a fork to combine. Then, add the flour mixture all at once and gently fold into the banana mixture. When all combined, beat the mixture 60 to 80 strokes. Finally, add the walnuts and stir.

Pour into a prepared 8" square cake pan and bake at 350. This recipe will need about 50 minutes. Test as you would for brownies. Cool before cutting and serving.
