Brown Sugar Pecans

I just made these and they are in the oven giving my house a wonderful fragrance. :cool:

1 egg white
1 cup brown sugar
1 TBSP flour
1/8 tsp salt
1 tsp vanilla
3 cups pecan halves.

Beat egg whites until foamy. Slowly beat in the brown sugar mixed with flour. Add salt and vanilla. Fold in pecans until all are covered with the syrup.
Transfer to greased cookie sheet and separate as much as you can.
Bake @ 250 for about an hour.

How can one tell they are REALLY from Louisiana? Do they wear bib overalls, hunt gators in john boats, or line up outside Antoine's on Easter Sunday morning for the best gombo ever?

Well, my pecans (pronounced p-kän, NOT p kan :ialu: ) did not turn out too well. I think I mixed the egg whites too much. :noparty: It got too fluffy and so is more like a meringue on the pecans, not a sugar coating. Still taste great though! :cheer:

Yes, that is exactly what you did wrong. You actually whipped the egg whites. That's okay. Lesson learned. Next time they will be perfect!

Everybody in the house pronounces it like you do Tat. Except for Kevin, who has been pronouncing it the other way since he was little. A while back I asked him why, and he said "Because I have more class than the rest of you." :rofl2: :lolh: :rofl: :laugh: :lol:






Actually he does, but I would never tell him that, the litle stinker.

I love anything with brown sugar, and this recipe is no exception.

Carmel Coated Walnuts

4 cups walnuts, one stick butter, 1 cup brown sugar, 1/4 cup white corn syrup, 1/8 tsp. cream of tartar, 1/4 tsp. salt, 1/2 tsp. baking soda

1) Mix together brown sugar, butter, white corn syrup, cream of tartar, and salt.

2) Bring to a boil for 3 minutes stiring often. Remove from heat.

3) Add baking soda and stir well until it settles.

4) Pour over walnuts and stir until well coated.

5) Pour into a large pan. Bake at 200 degrees for 1 and 1/2 hours, stirring every 15 minutes.

I made half of this recipe, and it still makes a lot.


I don't see why you could not use pecans instead of walnuts. :dunno:
