After a continuous six months of exclusively eating from the freezer...it is finally empty! We can buy new food again!
So this weekend we fire up the smoker again! Somewhere out there is a picnic shoulder with my name on it!
Then I will start churning out the smoked turkeys for one and all.

I've smoked Trout, Salmon and Ribs in my Oven. Used mesquite chips but one can use whatever wood chips of their choice, should be quite small. Use a standard, cheap roaster with rack, and heavy duty Foil for a cover will work.
