Spaghetti sauce for 95 people

So, I've been drafted to make spaghetti sauce with meatballs for my kid's football team, and the coaching staff, for a meal prior to their game, next Wednesday.

I went out and bought a giant bag of meatballs from Costco, because I've had them and I know they are good.

The rub is the sauce. I bought two giant cans of tomato sauce, totaling about 13 lbs worth. I plan to chop up some onions and garlic to cook up in there, along with some dried herbs (oregano and basil?)

Does anyone have a clue about quantities? I figure I'll need a cauldron to mix it up in.

I'd say about 1/2 -2/3 cup per person, which would be 4-5 gallons. Go to a place that rents catering stuff and see if they have a big soup pot or two.

When you choose your pot size remember that gallon of sauce weighs 8 lbs. You may want to use a smaller pot and make two batches.

If you were down here, everybody has a seafood boiler...maybe you should drive around this weekend and look for a Purple and Gold flag in your neighborhood. Odds are they have a seafood boiler.

I do have a couple of big stock pots that might do. I suspect it would be easier to transport in two pots, anyway. Good advice.

Well, I'm going to have to rethink this, apparently.

The woman in charge of the feeding frenzy says the person who made the sauce used FOUR bags of meatballs, and they had just enough sauce.

She's supposed to call and give me some more guidance next week. I may have to do this in four batches. :shock:
