Since I'm 3/4ths German, about 1/4 Irish (and allegedly, a sprinkle of Russian Jew), I have this really simple "recipe" for German/Irish Corned Beef:
3-4 Lbs of Corned Beef
peppercorn package (normally supplied with corned beef)
Approximately 8-12 new red potatoes
2 # sauerkraut, or to taste
2 cups water
Open Corned beef package
Lay in large disposable aluminum pan, fat side down
Cover with peppercorns (usually supplied in package)
Lay in 8-12 fist sized new red potatoes
Cover with a generous layer of sauerkraut, about 2-3 pounds (I use the bagged kind, and tonight, I used 2 bags)
Pour in 2 cups water
Cover entire pan with foil
Bake in oven at 350% approximately 2 1/2 hours, or until internal temperature reaches 160 degrees
Serve!
I originally made this dish for a potluck at work that was canceled at the last minute. Since we already had brought our stuff, we ate it anyway, and my co-worker Malaya said, "Honey, that is Irish soul food!"
The first time that I made this, I used that disposable plastic ware that is or was made by either Glad(?) or Hefty. When I was in Wal Mart last night, they said that they only carry it at Christmas time, which to me makes no sense, but, oh well!
