Homemade Ricotta Cheese and a Super Simple Recipe

Homemade Fresh Ricotta (Richard Ferretti)
(Makes 2 cups)
Ingredients
2 qt whole milk (preferably organic)
1 cup heavy cream
1/2 teaspoon salt
3 tablespoons fresh lemon juice
Equipment:
Cheesecloth, fine mesh (or 3 layers of regular)
Directions
** Line a Large Sieve with a layer of heavy-duty (fine-mesh) Cheesecloth and place it over a large bowl.
** Slowly bring milk, cream, and 1/2 tsp salt to a rolling boil in a 6-qt heavy pot over moderate heat, stirring occasionally to prevent scorching. Add lemon juice. Reduce heat to low and simmer, stirring constantly, until mixture curdles, about 2 minutes.
** Pour into lined sieve and let drain 1 hour. After discarding the liquid, chill the ricotta, covered; it will keep in the refrigerator 2 days.

Rigatoni with Tomato Sauce and Ricotta
This is an insanely simple recipe I’ve made with homemade Ricotta.

1 Lb Rigatoni (Big Tube Pasta with Ribs on the outside)
2 ½ Cups Marinara Sauce (Store Bought or Homemade)
1 Cup Ricotta, homemade or fresh
Parmesan or Romano Cheese
** Cook pasta in boiling salted water until al dente, drain
** Toss Pasta with Marinara Sauce in a Bowl (or pour over it on serving plate)
** Serve on plates with a Dollop of Ricotta on side of plate
** Grate Romano or Parmesan over the top.

AND: use Ricotta to make ; Lasagna, Manicoti, Ravioli, Gnocchi, and a host of others.

There was a market in the North End in the heart of Little Italy, Purity Cheese. They made Ricotta fresh every day. I thought they were gone because of the development there. La Contessa Bakery Cafe makes Ricotta Pies, and they still get their Ricotta from Purity Cheese. Their Riotta was unbelieveable.

I believe Purity Cheese moved to Quincy down near you (Ricciuti Drive, Quincy). Might want to check it out.
