I need crock pot recipes
With me going to school two nights a week and my daughters softball schedule I am never home to cook. The solution, besides spending my Sundays cooking in advance, would be crock pot meals.
My crock pot skills are limited to either a) Chuck roast with taters or b) pork roast.

Crockpot Chicken Cacciatore
Cook Time: 7 hours
Ingredients:
3 to 3 1/2 pounds cut-up chicken
1 large can (28 ounces) stewed tomatoes, not drained
1/4 c white wine
1/4 c chicken broth
1 6oz. can tomato paste
1 medium onion, diced
1 green bell pepper, diced
Mushrooms, optional
Garlic, to taste, minced
1 T Italian herbs
Salt & pepper, to taste
Red pepper flakes, to taste (leave out if the kids don’t like their food hot)
Parmesan cheese
Preparation:
Mix together stewed tomatoes with juice, tomato paste, wine, and chicken broth.
Place cut up chicken in slow cooker, top with diced onion, diced green pepper, minced garlic, and mushrooms (if you’re using them, I always use them).
Pour your tomato mixture over the chicken and vegetables and add your spices.
Cook all on low 6-8 hours until falling apart. Serve over your favorite pasta, sprinkling more pepper flakes (if desired!) and plenty of Parmesan cheese over it!

I have recently been learning to use a slow-cooker/crockpot. I found a really good cookbook: Not Your Mother's Slow Cooker Cookbook by Beth Hensperger and Julie Kaufmann. They tell you absolutely everything you need to know about slow-cooking and then some.

Beef Burgundy and Noodles
1 to 2 pound round steak; left whole or if necessary, cut into 2 pieces
2 teaspoons granulated garlic
salt and pepper to taste
1 can cream of mushroom soup
1 can mushroom soup with garlic
1 small can of mushrooms
1/4 teaspoon marjoram
1/2 teaspoon thyme
3 tablespoons dried minced onion
1 cup of burgundy
3/4 cup sour cream
Mix together soups, spices and herbs.
Pour this over the steak and cook on low 8 to 10 hours.

I am actually getting pretty good at this crock pot cooking. Thanks for all the great recipes. I have never been one to follow them to a tee but use them as guidelines.
Pixie, I ran the Chicken Cacciatore recipe by the girls. As soon as they saw 'stewed tomatoes' it was a no go. Sorry. I will try it sometime when they are not going to be around.
I have done chicken, pork, and beef. Made my first stew yesterday. The girls loved it. I want to try ribs and hot wings.

If you're limited in your library of cookbooks, there's a Zillion Slow Cooker recipes on the net. The 'Food Network' is a good source or try the following (PBS Test Kitchen):

Type in Slow Cooker in the 'Search' and that'll give you some ideas.
Most slow cooker recipes require a lot of preparation and many times pre-cooking e.g. Beef Bourguignon. I'd recommend using the slow cooker when the recipe only requires long slow cooking or braising. If the cooker doesn't have an auto-shut down to 'off' or 'warm' it's not a good idea to be away from it for more than 8 hours (say on a slow recipe for 9 hours on 'low').

1 lb. chicken breasts (or, chicken tenders)
1/2 C diced onions (optional)
1/2 C chopped celery (optional)
1/2 C diced carrots (optional)
4-5 C chicken broth
2 10-count cans Hungry Jack flaky biscuits
salt and pepper to taste
Place all ingredients (except biscuits) in crockpot on low for 8 hours. Cut biscuits dough into quarters, and add to the chicken and broth last hour of cooking. The biscuit dough will 'thicken' the broth.
I listed the diced vegetables as optional, as I know how precious time can be!
(However, you could probably also use frozen, chopped veggies too.) Enjoy!

I live by my crockpot in the fall and winter. Here are 3 recipes that are favorites in my home:
Cornish Game Hens
- Clean and prep game hens, as you would normally.
- Take aluminum foil, and round several into golf-ball sized spheres.
- Place rounded foil into crock pot.
- Sprinkle hens with salt, pepper and paprika (the paprika will give the hens a gold color).
- Place hens on top of foil in crock pot.
- Cook 8 hours on low.
Turkey legs
- Done the same way, as above. However, instead of pepper, use sage powder.
- Cook low, 8 hours. (Note: Can also lightly coat with favorite bbq sauce instead of spices)
Tomato Crab Soup
* 16 - 24 oz favorite tomato soup.
* 12-16 oz diced tomato (or stewed)
* 4-6 gloves minced garlic (adjust to taste)
* 1-2 cans shredded crab meat
Cook on high until soup is hot, then turn down low until ready to serve. NOTE: This soup is the thing I make that my family raves about, and friends request I make the most often.
I am going to check back on this tread often. The crock pot, the rice cooker, and my microwave are my kitchen's essential tools.

Hot Italian Beef Sandwiches Recipe
Roast beef and other tasty ingredients are slow cooked, then served on hoagie rolls.
1 small lean boneless beef roast - sirloin tip or top round, 1-1/2 to 2 pounds
1 large white sweet onion cut into thin slices
1 envelope Italian salad dressing mix
1 cup water
1 jar sweet peppers rings (14oz. to 16oz.)
6 sub rolls
Preparation -
Place the roast in a crockpot. Add the thinly sliced onions. Mix the salad dressing mix and water together. Add to the crockpot. Cook on low for 8 hours or until beef is very tender. Remove beef from crockpot; shred; place shredded beef back in crockpot with onions. Add the sweet pepper rings and cook on low for about 45 more minutes. Serve on sub rolls.

1/2 tsp. kosher salt
1/4 c. water
2 Tbsp. cornstarch
In 12-in skillet, cook bacon on medium. With slotted spoon, transfer bacon to 4 1/2 to 6-quart slow cooker bowl. Pour off all but 1 Tbps. fat from skillet; add chicken, and brown on medium-high; pour off fat.
Add mushrooms, onions, and garlic to slow cooker, top with chicken. Add wine, rosemary, and salt to skillet; heat to boiling. Pour over chicken.
Cover slow cooker, cook on low 6 hours, until chicken is thoroughly cooked. Transfer chicken and vegetables to platter, keep warm.
Pour sauce into saucepan. In cup, blend water and cornstarch; stir into sauce. Heat until sauce thickens and boils, stirring constantly. Boil sauce 1 minute, pour over chicken. Serves 4.

For starters, look under the BRAISED SHORT RIBS recipes (below), Jan 4, 09. Those can all be used in a slow cooker. usually about 3 times the 'hours' listed on LOW/. For example 3 hours would be Slow Cooker on Low for 9 Hours. We'll get some more in here pretty soon.

Tuscan Chicken with White Beans and Wilted Greens
Ingredients
2 cups sliced red onions
1 cup sliced fennel bulb
2 cloves garlic, minced
1 (15-ounce) can white (cannellini) beans, rinsed and drained
1 cup reduced-sodium chicken broth
4 (5-ounce) skinless chicken breast halves (with bone)
Salt and freshly ground black pepper
2 tablespoons chopped fresh rosemary leaves
1/2 cup sliced roasted red peppers (from water-packed jar)
4 cups chopped Swiss chard leaves
1 crusty loaf of bread
2 tablespoons olive oil
1 clove garlic
Directions
Arrange onions, fennel and garlic in bottom of slow cooker. Place beans on top of vegetables. Pour over chicken broth.
Season chicken all over with salt and pepper and place on top of vegetables and beans in the slow cooker. Sprinkle rosemary over chicken. Place roasted red pepper slices on top of chicken. Arrange Swiss chard all around chicken.
Cover and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours.
Slice bread and grill or toast, then drizzle with olive oil. Rub hot bread with garlic clove and serve with meal.

Serve over hot, cooked egg noodles or rice (True Stroganoff isn’t made with cubed stew meat but slice tenderloin, and it’s always on noodles, not rice) But this is easy. I’d consider adding some Paprika and sliced mushrooms near the end of cooking)
1 pound cubed beef stew meat
1 (10.75 ounce) can condensed golden mushroom soup
1/2 cup chopped onion
1 tablespoon Worcestershire sauce
1/4 cup water
4 ounces cream cheese
Directions
In a slow cooker, combine the meat, soup, onion, Worcestershire sauce and water.
Cook on Low setting for 8 hours, or on High setting for about 5 hours. Stir in cream cheese just before serving.
