6 ripe roma or plum tomato's
2-4 cloves garlic
extra virgin olive oil
Pour boiling water over tomato's. Let stand one minute. Drain. Peel skin off the tomato. Easily done by cutting the end that had the stem off and then 'popping' the tomato out. Dice.
Dice half the onion.
Chop basil and garlic. I use LOTS of garlic. LOVE IT!!!!!!!!!!!
Combine in bowl, add 1 table spoon of each olive oil and vinegar.
For the burger.
1 lb of burger. 85/15 is best for grilling. But use 93/7 if you do not want all the fat or are cooking on the stove top.
1 package of feta or blue cheese.
Combine burger and cheese and make into 1/4lb patties.
Grill to taste. Alongside with a big mushroom.
Top burger with basil pesto, available in the same isle as pasta sauces, bruschetti and mushroom on a nice potato roll.
