Apple Dapple Cake

I prepare at least three of these cakes each Christmas. (One for the staff at my daughter's school, one to divide for baked goodies 'gift trays' and one to serve Christmas day.) My extended family's all time favorite:

Apple Dapple Cake

3 eggs
2 C sugar
1 1/2 C oil
3 C flour (all purpose)
2 t vanilla
1 t salt
1 t soda
1 t cinnamon
1/2 nuts, chopped
3 C chopped apples (approximately 2 large or 3 small)

Preheat oven to 350. Grease and flour bundt pan (normal size.) Mix eggs, oil and sugar together. Add dry ingredients and vanilla. Add nuts, apples and mix well. Pour in pan, bake for 55 minutes. Cool.

Brown butter frosting

1/2 stick butter
1/2 C brown sugar (I prefer light instead of dark)
2 T milk
1/8 t vanilla
1/4 C chopped nuts (optional)

Combine all ingredients (except nuts) in small pan. LOW boil for 3 minutes. Remove from heat. Let cool for approximately 2 minutes. Spoon over cake. Top with nuts.

*I use the Pampered chef cinnamon. Makes for a most wonderful cinnamon flavor. I also prefer to bake the cake a day ahead, and frost the next. Somehow, the flavor intensifies. I've used dark brown sugar, and the frosting almost turns into chewy caramel, too gooey for frosting. But fun to lick the spoon! LOL!)

I printed out your recipe, Priscilla, and I'm going to make one this weekend.
