Roasted Red Pepper Pasta

Ingredients

8 oz rigatoni
3 T olive oil
1 t minced garlic
1 c ricotta cheese
7 T grated Romano or Parmesan cheese
1/3 c chopped fresh basil
1 t salt
1/4 t black pepper
1/2 c chopped jarred roasted red pepper

Cook pasta according to package directions

Meanwhile, heat olive oil in a medium saucepan over medium high heat. Saute' garlic in hot oil for 2 minutes.

Add ricotta, Romano or Parmesan, basil, salt, and pepper. Reduce heat to low. Add roasted bell peppers. Cook sauce, stirring frequently, until heated through, about 2 minutes.

Combine pasta and sauce and toss to mix. Serve immediately.

This is a great recipe. Kind of a nice change from the usual side dish and not hard to make.

I believe the jar (about 1 cup) cost between 2 and 3 dollars here. I am not a real good price watcher. :ohwell: I had to buy the basil which I know was $2.50 so it's not a real cheap dish.
