Shrimp Stir Fry

Post by Jarhead » Wed Jun 13, 2007 12:17 pm

Ingredients:

32-ozs. Cooked, Peeled and Deveined Shrimp
2 Tbsp vegetable oil, sesame oil or Extra Virgin Olive Oil
2 cups water
1/4 cups broccoli florets (eww I'll leave that out)
3 red bell pepper, cut into strips
1 1/2 cups pineapple juice
1/4 cup soy sauce
1/2 cup brown sugar
1 tsp ground ginger
2 Tbsp rice vinegar
1/4 tsp crushed red pepper
3 Tbsp + 1 tsp cornstarch dissolved in 7 Tbsp water
6 cups pineapple chunks, drained
1 cup slivered almonds, toasted

Instructions:

1. Heat oil and stir-fry raw shrimp until pink, about 3 minutes. If using cooked shrimp, stir-fry until heated thoroughly. Set aside.
2. In same pan, simmer 1 cup hot water and add broccoli and red bell pepper. Cover and cook until just tender, about 3 minutes.
3. Mix together remaining pineapple juice, water, soy sauce, brown sugar, ginger, vinegar, crushed pepper, and cornstarch mixture and pour over vegetables. Heat until sauce bubbles and thickens.
4. Add shrimp and pineapple chunks.
5. Spoon over rice, sprinkle with almonds.

I make almost that same recipe except with pork. I cut the pork in strips and brown it. Then add some water and cook slowly for an hour until it is tender. My sauce has brown sugar in it - equal to the amount of vinegar I think. I use less pineapple then that and also add onions.

I would substitute the rice vinegar with apple cider vinegar myself.
Hmm maybe add a half cup of raisins too.

That looks great - but I would just use 2 lbs of shrimp.

Are you sure about the 14 cups of brocoli? That seems like an awful lot compared to the rest of the ingredients?

Should be 1/4 cup. Oops. But it doesn't matter, I hate broccoli anyway and I'm leaving it out.

Is this something that I would use my new 10-lb cast-iron wok for or is that the orange chicken?

I happen to like broccoli. Particularly if it is stir-fired in sesame oil.
