Re: Crispy Hash Brown Waffle

I hear ya, and certainly many of our members are concerned about 'Diet', however it is often for 'DIFFERENT REASONS'. Some could be for specific health reasons such as Diabetes or Heart Conditions, for many it could be Weight, others to promote muscle tone and energy, and many simply a preference su...

Crispy Hash Brown Waffle I make Hash Browns often but I’ve never thought of finishing them this way. New Orleans & Mardi Gras

Totally upset I couldn’t make New Orleans Mardi Gras this year. Parades began February 6th. Most popular visit time is weekend before Mardi Gras (February 13- 17). Mardi Gras [Fat Tuesday] is the last Carnival Day, day before Ash Wednesday, first day of Lent. Most visitors will plan to arrive Februa...

MAHOGANY CHICKEN THIGHS

The Economy of Chicken Thighs: For ~88 Cents a pound one can create a fairly elegant meal with ‘Chicken Thighs’ . Thighs are often overlooked in the Meat/Butcher section. For those who love the richness of Dark Chicken Meat, braising will break down the fat and connective tissue and leave the meat ...

Re: Less Expensive Valentine Meals with Class

They call that a cream reduction sauce. You should cook the cream until it stops bubbling, and/or the bubbles get tiny (they will be large at first). You are boiling off the water and thickening the cream. Really, you should just whisk when the wine is added. That deglazes the pan and gets those fl...

Re: Valentine Red Garnishes/Sides

Nice! They are, aren't they. Well, I was searching for 'ideas' on Garnishes with Red - so I thought I'd share a few in here. I am totally inept at creating Origami with fruits and vegetables, but a few look simple enough. There are some Videos on YouTube where one can watch them being made. However...

Valentine Red Garnishes/Sides

Some times we push ourselves to think of a Garnish for a special meal, for those special people on a special occasion. So at Valentines Day we tend to think of Red, obviously Green is much easier. These are just a few ideas on how one can dress up a meal with simple ingredients, and a little Labor o...

Ya, it was the simplest I could think of at the time. They're a struggling family w/3 kids, both working, but well, y'all know what it's like these days to serve a family of 5 every month, especially at holidays.
So I didn't embellish the recipe with adornments.

Turtle Sauce Picante is considered by many to be the quintessential Cajun/Louisiana dish. When done correctly, nothing, except possibly redfish court bullion (AKA "coubullion"), rivals it. I love a dish of alligator. It is the finest and most delicate of meats. Fav, you could work miracles with it in one of your tomato based sauces. It is a sin to fry it. Get it fresh, if possible.
