Re: GNOCCHI - Recipe/About/Some Tips

GNOCCHI INTRODUCTION There are many Gnocchi Recipes, especially from the old world, some using Potatoes & Flour, some use only Semolina Flour, some no eggs. Several recipes incorporate vegetables or herbs or cheeses into the Gnocchi. Most recipes we’re familiar with simply boil the gnocchi and serv...

OSSO BUCO One of my all time favorites, in a Restaurant, and at home for special occasions I posted this In Here before: Covert Conservatives, under falvegas, Sun Nov 16, 2008 3:33 pm https://s-media-cache-ak0.pinimg.com/564x/ec/bd/e1/ecbde11c26f13fcf872e2eb1753fdd34.jpg For those not familiar with...

Re: BAGNA CAUDA (a request)

It's difficult to believe that one can't get genuine Italian or French Breads these days. Almost every market near me carries a pretty good supply of Artisan Breads ...I couldn't live without them. I know, and it drives me nuts. You should see the restaurants around here. Some people think this one...

Re: BAGNA CAUDA (a request)

Bagna Cauda is an Italian Anchovy-Garlic Dip , as I recall it’s from the Northwest region of Italy, near the mountains. It’s made from Olive Oil, Garlic, Anchovies, and either Butter or sometimes Cream. The northwest region of Italy is correct, the town of Moncalvo, which I believe is near Turin. I...

Sounds like something that would be good on a crunchy sourdough or baguette also.

Of course; especially an Italian Bead, even a basket of Bruschetta or Crostini could work.

Re: BAGNA CAUDA (a request)

might sound kind of stupid but is this a fishy tasting dish? I like sardines in caesar salad proportions, much more than that, to me is smells like something for the dog or cat. Not really, more of a Garlic Dip. And yes, anchovies tend to meld into the Dip as they do in a Caesar Salad Dressing. Bee...

Falvegas, do you by any chance have a recipe for gnocchi? My Northern Italian grandmother used to make it, and they were light as a feather. What kind of a sauce would you serve with it? Also she used to make Bagna Cauda, it was so good, especially when served with crusty Italian bread. Can you bel...

Re: Steam cooked eggs

My brother is a chicken wrangler, h has made quite a hobby out of raising chickens, and he passed this on to me. Instead of hard boiling your eggs, put them in a steamer basket and bring water to a boil. Boil for ten minutes covered. Take out and peel as usual. The egg yolks are deliciously creamy,...

Re: Sweet Corn

It's sweet corn season here in Iowa. :dinner: This is how you MUST prepare sweet corn IMO. For every gallon of water, add 1 T. of lemon juice and 1 T. of sugar. Cover ears with water and bring to a boil. Do not add salt to the water (salt toughens corn) Boil uncovered 2 minutes. Remove from heat. L...

Re: SESAME ORANGE SHRIMP

PS:
When I Fry or Saute Fish or Shellfish I always use either, Grape Seed Oil, Avocado Oil, or Vegetable Oil ....just personal, I'm not a friend of Canola Oil or Corn Oil. Olive Oil is Excellent for specific recipes when a Mediterranean dish calls for it.

KANSAS CITY RIBS

KANSAS CITY RIBS Most of the time I BBQ Southwest Pork Ribs [Loin Back Ribs], but occasionally I’ll do Kansas City Style Ribs [Side Spareribs ]. They BBQ close to the same amount of time [~4 hours]. The K-City Rib uses the St. Louis cut of Rib, and the Rib-Rub is much less complex than the Southwes...

Is that center one (the favorite) tart? Or...describe how that tastes. I may try it for guests. Well, since I cook a lot of Southwest, that one is quite Southwest. You'll notice it has a Serrano Chili in it, so it will be mildly spicy. Of course the Serrano can be left out and use a Jalapeno, or ev...
