That is similar to my dry rub. I don't use the mustard nor the sugar, but add garlic, ginger and cloves (the last two in very small amounts). My last shoulder got very favorable comments when I added a hint of marjoram and sage.

Except for spatulas, wooden utensils are easy on the pans. They also do not make that annoying scraping sound when you do a lot of stirring. After a few years they crack, but you just discard them and get some new.
