Re: Do you guys brine your turkey?

It is likely the cooking in the smoker that caused the good result. When I cook the turkey in my smoker, it goes before any of the other turkeys at "the gathering of the clan".

This year the clan has requested slow-cooked pork shoulder. Maybe so their turkey will get some attention! ;)

I don't use them except for that one recipe though. I was in Amish country a few weeks ago and bought some of their homemade no...

Don't fool around! Order a bag of this chili powder and use it in the recipe on the bag. This particular brand makes a HUGE difference...more than anything else we have tried...in the quality of the chili. http://thechileshop.com/hatchmediumredchilepowder.aspx http://thechileshop.com/images/products...

Sounds good! A friend of mine just smoked a pork butt and shared with me so now I just need some coleslaw to make my taco. Coleslaw in a taco? What - no jello salad? :teehee: I thought coleslaw on bbq pork was a tradition in the south? :dunno: I have never tried it. It is! Go for it!

Re: Sweet Corn

It's sweet corn season here in Iowa. :dinner: This is how you MUST prepare sweet corn IMO. For every gallon of water, add 1 T. of lemon juice and 1 T. of sugar. Cover ears with water and bring to a boil. Do not add salt to the water (salt toughens corn) Boil uncovered 2 minutes. Remove from heat. L...

Pulled pork tacos

A fellow slow cooked pork shoulder (aka SCPS) coerced me to an Alabama SCPS purveyor with the promise of something radically new in the SCPS universe. Upon arrival I was presented with pulled pork tacos! As you know, the CSA Dept of Pork Excellence standards require that SCPS be served with cole sla...

I have eaten crab in Iowa and at places near the ocean. The ones in Iowa are hard to crack and get the meat out (they are "soggy") I assumed it was because they were not as fresh? I didn't have a problem cracking them in restaurants near the ocean. Am I right in that, fresh crabs are easier to crac...

Re: Live Crab

Depending on the size of the crab and the skill level of the diner, get 4-6 crabs per person. If you are unskilled at "picking crabs" you may be frustrated or tired after four or so. The crab meat inside the crab is in a number (about 16) of "compartments" and you must pick the meat out of each one....
