Every year at Christmas time, Costco gives out free cookbooks, every recipe I have ever tried has been awesome. This pie is easy to make, the people that eat it think of you as a master pie maker... In regards to treating the pan when I finish washing it...
I generally use vegetable oil, because it's cheapest, but if olive oil is already out, I will use it.

I cook with cast iron on my glass top stove all the time, common sense will keep you from having problems. Well it turned out awesome! Thanks for the recipe Favelgas, I did use peanut oil since I was out of vegetable oil, and the roux came out very tasty! :thumbsup: The extent of my southern cooking was pretty much limited to meeting Paul Prudhomme and Dom Deluise team up at a company sponsored food show...
