Re: Thanksgiving Menus, Recipes, and Ideas

I decided to NOT stuff my turkey this year. :ohwell: I figure I will not have to roast it as long and therefore it may not get as dry.

Re: Potatoes

Does it effect the flavor/texture of mashed potatoes if you peel/cut them the day before and soak them in water in your frig? I am trying to save some labor on T-day. I heard once that they will absorb the water and get mushy but I'm not sure if that's true. Yeah I was afraid of that. I know it wil...

I looked on the web. Did you use a self basting turkey? If so, that could also add to the saltiness.

Re: Thanksgiving Menus, Recipes, and Ideas

I brined a turkey breast yesterday to test it out and it came out way too salty. I used the guidelines from Williams Sonoma website saying a cup of kosher salt to a gallon of water and brining for an hour per pound but it was really salty. Any ideas? ON NO! Please don't let my turkey turn o...

I made my vegetable stock and turkey brine today. I made the pumpkin puree. It was really easy. I also made homemade butter - FUN! and two pie crusts are in the freezer ready to be rolled out.

Re: Thanksgiving Menus, Recipes, and Ideas

I was going to use that buttermilk brine but you still need to buy William Sonoma's brine mix and I don't have one in town. I am going to make my own pumpkin puree this year IF I can find a pumpkin at the grocery store yet. I saw this recipe for Pumpkin Creme Brule that I thought looked  I do...

Re: Beer Bread!

You wouldn't need a food processor. You could use a mixer or just a jar and shake! I read that one woman put it in her washing machine!

Re: Beer Bread!

Have you ever made your own butter? I was reading a blog awhile back where she made it and says it is SO much better. I think I am going to try it. I guess you just put cream in a food processor and let it go. She said you here this "thump" and all at once it is butter. Then you drain the buttermilk...

Re: Brined Turkey

I make a tent with aluminum foil to put over the turkey while it roasts. I'm not sure about the cold slurry but I think it refers to using cold water to mix with your thickener (flour) when making gravy. Yes, the tent can be placed over the Bird about half way through. As you certainly know it shou...

Re: Brined Turkey

using a non-contact tent over the bird during roasting, using a cold slurry to mop the bird while cooking. It hasn’t failed in 7 years.
How do you do a non contact tent and what is a cold slurry? :hmm:
