Don't overcook them. They are a bit tougher than beef.

Add 1/2 can of cream of celery soup to your pot (1 gallon or so) of red beans. A whole can will make it too salty. If I add a 1/2 a can of cream of celery soup to a gallon of my pot, salty taste wouldn't be a problem. The beans, on the other hand..... Might be a great appetizer next Christmas, thou...
