What I finally realized was that all the best ones were ground immediately before either a pour over brew, or an espresso brew. As fo...

Re: Ham Glaze
My default glaze is honey. Pat the ham dry and brush with honey JUST before putting in the oven. The honey draws moisture from the ham and if you let it sit too long it washes itself off.

Re: Miracle Whip
We always use Miracle Whip in place of mayonnaise. :faint: :noose: I hate Miracle Whip! I've been making this macaroni salad since 1971 or 2 when I got the recipe from a friend. Everyone loves it! 4 cups cooked elbow macaroni 1/2 cup green onions, chopped 1/3 cup green peppers, chopped 1/2 cup shre...

Re: Sweet Corn
FD has the best corn recipe but if times are hard and the other essential ingredients are unavailable, don't let that stop you. For Poor Boy's Unenhanced Cajun Corn, just add the crab & shrimp boil to the corn. I would tell you the dosage which is critical but I just can't bring myself to reveal a ...

Re: Fettucine Alfredo
A couple of tips... A little Lawry's seasoned salt is often a quick fix. A small pinch of cayenne or five drops of Tabasco sauce. If you taste the hotness, you added too much...put it will add a little "something" that you won't quite put your finger on. Other than that, all I can say is to make sur...

Re: Cajun Caviar
Yes, it is good. Get the Tabasco brand pepper jelly. If you are feeling lazy, plop a small block of warmed cream cheese on a plate, cover lavishly with red or green pepper jelly, and you have a excellent spread for ANY cracker. I often prefer saltines, because they don't interfere with the taste of...

Them oyster crackers would really liven up a bowl of soup...they look tasty as a snack. I like these easy recipes...we are in the rotation for snacks between Sunday School and Church service, these might work. If you want "easy", substitute bottled Italian dressing for the canola oil and ranch mix....

Re: Buffalo Wings
Turtle Sauce Picante is considered by many to be the quintessential Cajun/Louisiana dish. When done correctly, nothing, except possibly redfish court bullion (AKA "coubullion"), rivals it.

Re: Buffalo Wings
I love a dish of alligator. It is the finest and most delicate of meats.
Fav, you could work miracles with it in one of your tomato based sauces. It is a sin to fry it.
Get it fresh, if possible.
