You can rub something made of stainless steel over your hands while holding them under running water and it will take the smell away. Maybe a large serving spoon or so ladle. I think Pampered Chef or Williams Sonoma even sells a stainless "bar of soap" for just that purpose.

They will swell for sure but even if they do get mushy, just cook them on the stove a bit longer after you mash them. It takes out the water and firms them up again. They will be fine. I'm not sure how to make it sour. Alton Brown has a recipe for bread where you let it go overnight. That might be as close as you get. I have no clue otherwise.

Cranberry sauce in a can will melt if you heat it... I suppose you could melt it down over low heat and then pour it in the mold and see if it will solidify again in the fridge.
